Crescione

Have you ever heard of crescione? Would you like to cook it like a real romagnolo? Try our recipe!!


THE RECIPE

Ingredients:

  • 1 Kg. of flour,
  • a pinch of bicarbonate of sodium,
  • 150 gr of lard (the quantity is variable according to the areas, in fact it can reach the 300 gr),
  • salt,
  • water

Preparation.

Mix all the ingredients starting from the usual fountain of flour.

When you reach a hard mix, flat it with the "mattarello" (well floured) reaching a very thin layer, with a round shape.

The crescione or cassoni is a piadina which is rolled out thinner and then filled and folded in half in the shape of a half moon.

The fillings are made with different herbs and vegetables (chard, spinach, red cabbage) which can be cooked or flavoured.

The types of fillings are numerous and can also have cheese added.
